Rhubarb and Goat Cheese Pizza





Pizza Dough (Your favorite recipe or store bought)

1/2 lb rhubarb, cut into 1/4-inch slices
1/2 cup cranberry juice
2 Tbsp brown sugar
2 Tbsp balsamic vinegar
1/2 tsp ginger

4 oz goat cheese 
1 Tbsp Aleppo Chili Flakes

Basil


Preheat oven to 500.

Cook rhubarb, cranberry juice, brown sugar, balsamic vinegar and ginger.  Bring to a boil and cook until it thickens enough for you to drag a spoon across the bottom of the pan and leave a clean streak.  

Mix goat cheese and Aleppo chili together.  

Roll out pizza dough.  Spread rhubarb sauce out to the edge, leaving a clean 1/2 inch or so.  Crumble goat cheese mixture over rhubarb sauce.  

Bake for 10 and top with torn or sliced basil.
